
Whole-Wheat Buttermilk Pancakes
~ Cooking Light
Combine and set aside:
3/4 C all-purpose
3/4 C wheat flour
3 T sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
In a separate bowl, combine:
1 1/2 C low-fat buttermilk
1 T vegetable oil
1 large egg
1 large egg white
Gently stir all ingredients ~ just until combined. Drop by 1/4 cupfuls onto hot griddle. Wait until topside is covered with bubbles and flip. Cook another couple of minutes and remove.

I’ve been making/tweaking this recipe for five or six years now. It’s a family favorite!
My modifications:
~ I use all wheat flour {I sometimes have to add extra buttermilk because of this.}
~ I substitute extra-virgin olive oil for vegetable oil and increase it to 2 tablespoons.
~ I add in 1 tsp vanilla extract.
~ And I like to add a sprinkling of toasted wheat germ onto of each pancake while cooking.
