I’ve got to give a shout-out to my girl, Liz! She is THE most faithful reader of this blog. Married to my bro, Jeff, she has to put up with a lot, but there’s benefits – like having me for a sister.

Wouldn’t you agree, Liz? ;D

This picture was taken in April of ’07. Hubby and I renewed our vows for our 10th wedding anniversary – she was my matron of honor. Don’t we look fab?!?

Chocolate Chip Cookies

~ Nestle Toll House
2 1/4 cup all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar
1 cup butter
2 eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
2 cups chocolate chips

Preheat oven to 350. Spray two cookie sheets with non-stick spray.

If you have time, I recommend taking your butter out and letting it soften for a couple of hours. If not, toss it in the microwave just until it’s softened – don’t melt it. You’ll know it’s softened when you can gently press your finger into the butter and it looks like this:

Mix your flour, baking soda and salt. Set aside.

In another bowl, add your sugar, butter, eggs and vanilla.

Stir until everything is combined.

Add in your flour mixture.

Stir in your chocolate chips.

I use a regular size spoon to scoop out the cookie dough. Get a heaping scoop and place on the cookie sheet. Don’t roll the dough into a ball (It’s more of a personal preference on my part – I like the look better when they’re not rolled). I get six cookies per cookie sheet.

Place the cookies in the oven and set your timer on 11 minutes. Sometimes mine are finished at that point and sometimes they aren’t. I take them out when just the edges are golden brown and the center is not quite set.

Leave them on the cookie sheet for about 10 minutes.
